I got annoyed with how much granola bars cost - AND we are trying to reduce waste so the less "packaging" we purchase the happier I am.
I decided to try making our own granola bars. I found a recipe on allrecipes.com but had to modify it to suit us... William has the job of cutting up the sticks of butter and melting them. Also he like to help mix and pour ingredients... here is the result:
INGREDIENTS
4-1/2 cups rolled oats
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
2/3 cup butter, melted
1/2 cup honey
1/3 cup packed brown sugar
1 cup miniature semisweet chocolate chips
DIRECTIONS
1) Preheat oven to 325 degrees F. Lightly grease one 9 x 13 inch pan.
2) In a large mixing bowl combine the oats, flour, baking soda, vanilla, melted butter, honey and brown sugar. Stir in the chocolate chips (or whatever else you want to use instead).
3) Press mixture firmly into the prepared pan. Bake for 18-22 minutes (we convect bake for 20) or until golden brown. Let Cool for 15 minutes, then cut with pizza cutter. WAIT for bars to cool completely before removing or serving!!
Makes 24 bars...

I made these with my kids this afternoon. They were easy to make and the kids liked them. I think we'll try them again with Butterscotch chips.
